Dorayaki

this recipe is perfect… much easier  to handle and taste just right
  • 200g pastry flour
  • 1 teaspoon of baking powder
  • 150g sugar
  • 2 extra large eggs
  • 70ml of milk
  • 1 tablespoon of soya sauce
  • 1/2 tablespoon of mirin

Sift flour & baking powder for a few time and set aside. mix milk, soya and mirin a small bowl and set aside. beat egg + sugar until ribbon stage.  then add milk mixture.  quickly mix flour into the batter (remember not to overmix).

Turn on medium low heat and lightly grease the pan and use disher to scope batter on pan.
